It took me a long time to make this recipe. I thought I had all the ingredients, but then I realized I was missing a pepper. I had H buy a red pepper, but we ran out of onions before I could make the dish. I bought an onion and discovered my chickpeas had gone bad. I roasted the eggplant last week, but just added the chickpeas this morning. Anyway, it shouldn’t take 5 days to make this recipe if you make a proper grocery list. It is quite tasty & very easy. I just wish I had a pretty dish to put it in, but this is the fanciest bowl we have at the office.
That is a very hot pepper in the middle. Have some water nearby if you use random peppers from an Asian market.
