Sweet Potato Falafel

This healthy take on falafel from Fat Free Vegan Kitchen is delicious and tahini sauce elevates it to the next level.  Unfortunately, I couldn’t make Susan’s tahini-yogurt sauce, because I can’t get plain soy yogurt in Woodstock.  Strawberry & tahini doesn’t sound very good.  Instead, I made the tahini marinade from Vegan Fusion.  I omitted a 1/4 cup of water and added a little extra tahini to thicken it up.  We had the falafel with pita bread, cucumber, tomato & lettuce.


And now I’m watching the BCS Championship Game.  Roll Ducks Roll!
