Amy’s Vegan Margherita Pizza

I’ve tried a bunch of great vegan products recently, so expect the next week to have more product placements than an episode of Project Runway.

First up, Amy’s Vegan Margherita Pizza with Daiya cheese. I’ve been wanting to try this forever.

Amy’s pizza were on sale at Whole Foods last week and I wish I stocked up. I like Daiya, but in moderation and this pizza has just the right amount. There’s enough of that cheesy taste without the overwhelming sensation that you are eating fake cheese. The sauce is delicious and the crust is nice and crispy.

Vegan Pizza Day

To celebrate this very special holiday, we had two types of pizza.

Chick-un Tikka Masala – chickpeas, potatoes, and eggplant with a spicy tomato sauce

Vegan Salad Pizza with ranch dressing, avocado, tempeh bacon and greens (it calls for romaine, but I used arugula from the farmers market).

Both recipes were delicious. The salad pizza recipe makes a ton of ranch. Even halving the recipe would have given me extra dressing for a salad or chick’n fingers.

Minneapolis Half DNF

There was one other time that I didn’t finish a race. It was last fall at the Crystal Lake half, but I was just doing it as part of a training run and I ran 7 miles before the race started. Plus I was still injured. After run-walking back to the finish line park, I just walked back to my car. But this was a real race. My spring A race that I trained for. I have a million and one excuses, but it is all my fault and I learned from my mistakes. I have a new race ready to go on 6/24.

Excuse #1: breakfast. I ate too much in the morning and not enough the night before. I forgot to pick up a peanut butter builder bar (my usual long run meal), so I got this bagel at the breakfast buffet. I didn’t eat it all but it was still about 100 calories more than what I usually eat and only 45 minutes before the start.

Excuse #2: water. I didn’t drink enough of it on Saturday and was dehydrated.

Excuse #3: temperature. I wish the half and full marathons started together. Starting at 6:30 would have made a huge difference. In the sunny spots, it was vert hot at 8. The humidity was bad, too.

Excuse #4: the 1:40 pace group. I thought I would try running with the 1:40 pace group. It was a little faster than what I trained for, but it would be nice to run with a group. Except, the 1:40 pace group, which was supposed to be doing 7:38, was really doing 7:30 and that was 15-20 seconds faster than what I trained for. I let them get out of my sight after mile 4 and just tried to focus on running a 7:45, but it was too late.

I stopped for about a minute before stopping my watch, stretching my calves (as if that was going to help).

After the race, we went to Cafe Luce, which offers vegan pizzas (gluten-free is also available).

The post race pizza that made everything better; the Rustler with rinotta (not ricotta) cheese. I don’t care for pineapple (and I did scrape some off), but this was so good!

Snow Day Pizza

The snow started coming down pretty hard yesterday, so both H & I were home by 2:30 with cups of hot chocolate and vegan marshmallows in our hands. Sassafras was happy for all the extra pettings.

The snow settled down by 6:00 or 7:00, but the roads were bad and it was cold, so we were staying in. We usually go out for dinner on Friday nights, so I had nothing planned. I scrounged around the kitchen to put together a  meal that would keep us out of the snow.

I had one frozen Rossini Pizza from Vegan Essentials.

I scraped some cheese (it’s Daiya) off the pizza, sliced 1/3 of a red onion, and sauteed the chickenless strips until a little brown and coated them in barbecue sauce.  I added the onion to the pizza, then the chick’n and added the cheese back on the pizza. Baked for 20 minutes and voilà! A delicious vegan barbecue chick’n pizza.

For a side, I made Raw Sesame Kale Salad, which was pretty good. I’ve had raw kale salads before, but this was my first time making one.

New York Slices on Ice

I noticed this pizza a while ago in the frozen section Whole Foods, but never bought it because it looks pretty small and was kind of pricey for its size. I was pleasantly surprised to find a lot of pizza in that small box. Rather than one round pizza, there are eight individual slices in a resealable bag (which it clearly states on the box, but I never bothered to read in the store). I added some vegan sausage to the slices  in attempt to recreate Classic Slice.

In only 7 minutes, your pizza is ready!

Pretty good for frozen pizza! Vegan pizza and a pumpkin beer, a great combination for cheering on the Crimson Tide as they soundly defeated Ole Miss last night.

Milwaukee Lakefront Marathon

I put in all the hard work, but two weeks ago I wasn’t even sure I was going to be able to run this race. I couldn’t even walk without pain. I took two weeks off of running and managed to do two runs this week without pain, so I decided to go for it. My plan was to start off with friends and then hang back for a 4:15-4:30 finishing time. I was also planning on meeting my dad at mile 25 and running in with him. I registered him for the race, but with all the treatment he underwent for lymphoma, he was not able to run it. He ran the first mile and a half and the last .7 and I’m so proud of him!

It was a chilly start. Perfect marathon weather.

I didn’t find Anne, but I saw Susan, Lauren and Patty and squeezed into the crowd just as the national anthem was being sung. The race started and we crossed the finish line about a minute later. We ran a pretty consistent first half. I didn’t wear a watch, so I was just enjoying being out there. The only discouraging moment was when we passed the 17 mile marker…for the second time. I think mile 16 was mistakenly labeled mile 17.  This was my most consistent race. Up until mile 20, I was on pace for 4 hours.  I didn’t have any mental breakdowns like in Illinois and while my legs were tired, I felt strong the whole way through. I met my dad at mile 25.5 and we jogged and walked in, which added some time, but was the best part of the race. My final time was 4:06. 10 minutes slower than Illinois, but I felt 100 times better at the end.

Post run pizza at The Classic Slice. So good! I ordered the Mediterranean (olive tapanade, sun-dried tomatoes, spinach, mushrooms and vegan sausage). The slices are ginormous! It was the perfect post-race meal though and a good find. If you go to Milwaukee, you need to check this place out. It does offer vegan cheese, but I prefer cheeseless to soy cheese.  The sausage was great!

Baigan Bharta Pizza with Daiya

I found this recipe for pizza on Sunshine and Smile (her pictures are great!) and thought it was an absolutely brilliant idea. I was looking for a pizza recipe to use the pizza dough I bought at Trader Joe’s, so I didn’t follow the crust recipe.  The eggplant takes a while to roast, but other than that it is a pretty easy recipe (especially with store bought crust!). The only adjustments I made were using Cheddar Daiya and parsley because Jewel was out of cilantro.

Splish Splash Half-Marathon

This morning was the Splish Splash half-marathon in Gurnee. My friend Anne and I signed up a couple weeks ago when I received notice of a 50% off deal from Schwaggle. How can you pass up a $27 half-marathon (even if you ran a marathon three weeks ago)? We decided just to do it for fun, rather than race it, but both of us felt good this morning and we went out faster than “fun run” pace. Unfortunately, it got really hot and humid around mile 11 and our pace slowed significantly. I also dropped 2 of my 4 clif shot bloks on the ground!

There was a post race Luau. Of course, it was meat-centered, but they had a lovely display of fruit, a couple salads and stir-fry veggies. I also had a margarita. It was an odd meal for 10:00 in the morning, but when you’ve been up since 4:30, it’s somehow okay.

Anne and I both came in third in our groups. We stuck around for the awards ceremony and got our special medals (which say nothing about placing in an age group). It wasn’t a very competitive race, but it was still fun to place in an age group.

The finisher medal is on the left with the blue ribbon and you’ll just have to take my word that the medal on the right is for third place.

After the race, we drove back to McHenry, so I stopped by Meijer and Nature’s Cornicupia. I was craving a TLT (tempeh bacon, lettuce & tomato sandwich), so I bought some tempeh at Meijer and found reduced-fat vegenaise at Nature’s Cornicupia.

For dinner tonight, we had pizza and wine. I cheated and bought crust at the grocery store. H likes thin crust but I’m not very good at making it. I made a Middle Eastern inspired pizza with Za’atar, olives, red onions, pine nuts and tomatoes.  I also made a pesto and potato pizza inspired by this recipe from my sister’s blog.  Instead of cheese, I used chopped spinach. I sprinkled soy parmesan on both.
