To use up some yogurt in the fridge, I made this salad recipe. It started out really well. I made about 15 perfectly round balls of falafel, but then I noticed an onion on the counter. Why did I buy that onion? I reread the recipe and realized that the falafel should have an onion in it. I threw all my falafel balls back into the food processor and added the onion. The result was a falafel soup. I added chickpea flour and more chickpea flour and another can of chickpeas. I finally got it to a point where it would keep its shape when put in the pan. The taste was fine and, when cooked, the texture was okay.
Everything came together really well. This is my kind of salad – very little vegetable chopping.
It may have been difficult to make the falafel, but the runny batter was perfect for Waffles!
I don’t remember where I first saw the “falwaffle,” but its a pretty great idea. I plan to stuff one in a pita with hummus for lunch tomorrow.
