Kale is the poster vegetable of veganism. I think it’s required eating for all vegans. From “only kale can save us now” to “eat more kale,” there is no shortage of vegan love for this vegetable. Mixed baby kale is a great way to introduce yourself to kale. It’s softer and less bitter, so it can easily be eaten raw. I made this super simple kale salad with red bell pepper, sunflower seeds and a vinaigrette (lemon juice, olive oil, balsamic vinegar, Italian seasoning and Dijon mustard).
