Yet another thing I found on Pinterest that needed to be veganized: Gingerbread Cheesecake Bites. I didn’t have the luxury of pre-made dough, so I made the gingerbread cookie recipe from Vegan Cookies Invade your Cookie Jar. I used Trader Joe’s vegan cream cheese, which I would not recommend because it’s not very white. I added a 1/2 teaspoon of lemon extract to the filling, which is a nice touch. I have some dough left over, so I can make some cutout cookies this weekend. They do not look as pretty as Diane’s but they sure are tasty.
