a.k.a. poor meal planning.

We have a ton of margarita left over from Cinco de Mayo, so I decided to do tacos tonight. I know it’s Tuesday, but these Pinto Bean & Poblano Tacos from Martha Stewart looked really good. And they turned out to be quite tasty, even though peeling skin off of poblano peppers is extremely annoying.

The recipe calls for fromage blanc or plain nonfat yogurt, but plain soy yogurt works just fine.

The margaritas were a much better consistency this time, but they are still very strong.

With one can of beans spread over six servings of tacos, I added some more protein with a Corn-Edamame-Sesame salad from Veganomicon served over mixed greens. It doesn’t exactly go with tacos, but fusion cuisine is trendy, right? Besides, it was the only salad where I had all the ingredients.
