I started prepping for Sunday’s brunch today. The ornament cupcakes look fabulous and mini quiches are yummy. Some stuff did not go so well.
Gingerbread Biscotti: I’ve made this before & it was really good, but unfortunately I forgot to add the sugar. Sugar is a crucial ingredient. Fortunately, I tasted a crumb in the middle of baking (while I was cutting it into pieces), so I didn’t waste any more time with it. There was no time to remake it. Mainly because I was focused on the below-mentioned disaster.
Snowman Cake Pops: I saw these at the decorating class at Seasons By Peg. Mistake number one was not doubling the cupcake recipe for my 9×13 pan. That would not have been a big deal if I had then cut in half the amount of icing added to the cake. They sat in the freezer overnight, but they still weren’t that hard. Coating them with melted vegan white chocolate chips was very difficult. I softened the melted chips with almond milk, which made it easier to coat but too slick to write on with my edible marker. One turned out kind of cute. The others are too slick or too bumpy to write on, so basically they are just big white spheres with tiny hats. The only thing that worked well was covering a box in wrapping paper and poking holes through instead of using Styrofoam.
